After a quick dinner or lunch that is still going to be yummy? then this Gluten-Free herb pesto pasta recipe using Demeter gourmet jalapeno herb hot sauce!

Ingredients

Demeter Herb Pesto Pasta Ingredients:

  • Gluten-Free pasta
  • Small handful fresh parsley
  • 6 mint leaves
  • Handful basil
  • 4 garlic cloves (chopped finely)
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1/4 cup grated Parmesan
  • 1/4 cup pine nuts
  • 2 tbsp Demeter gourmet herb hot sauce
  • ½ cup olive oil

Demeter & Olive Oil Drizzle:

  • 2 tbsp Demeter gourmet Jalapeno herb hot sauce
  • 1 tbsp olive oil

Garnish:

  • Grated Parmesan
  • Pinch of sea salt
  • Basil leaves

Instructions Pesto:

Blend the basil leaves, parsley, mint leaves, pine nuts and a pinch of sea salt into the bowl of a food processor and pulse several times.

Add garlic, Demeter gourmet jalapeno herb hot sauce and Parmesan and blend in the blender. Scrape down the sides of the food processor with a rubber spatula.

While the food processor is running, slowly add the olive oil in. Adding the olive oil slowly, while the processor is running, will help it emulsify and help keep the olive oil from separating.

Season with salt and freshly ground black pepper, add more to taste. Pop in a bowl and set aside.

Instructions Pasta:

Bring a big pan of water to the boil. Add your pasta and cook for 8-10 minutes for perfect pasta, stir every now and then! Once cooked drain and put into a cold large bowl, make sure to reserve at least 1 cup of the pasta water.

Pop the pasta back into the pan that you cooked it in and add the reserved pasta water, pesto and ¼ cup grated Parmesan, mix well.

Get 4 serving bowls and pop in the pasta and drizzle over the Demeter & olive oil drizzle and then sprinkle more grated Parmesan over with a pinch of sea salt and garnish with a basil leave.

When about to eat it break up your basil leaves over the top, Now Enjoy it!
